Gourmet Abu Dhabi 2014

In February 2014 I had the pleasure to host in my kitchen Chef Fabio Pisani from the restaurant "Il Luogo di Aimo e Nadia".
He came to Abu Dhabi with his team (Diego and Niccolo') for the event "Gourmet Abu Dhabi".
Indeed it is not simple for a chef to go inside a unknown kitchen and put in place a menu a la carte, a cooking demo and a chateau dinner in four days, as well as it is not simple for who has to organize and host these kind of events, but I'm very happy to say that we did a great job together and the feedback we received is outstanding.

He's awarded with two Michelin stars and I have to say, he worth them and I think they are not enough. His cuisine is a perfect balance between exquisite flavors, prime raw ingredients and refined technique and on top of all, he's a great person to work with.
I really enjoyed the days we spent not only running to be ready, but also sharing experience and, why not, laughing sometimes.

The Burrata


Once again, Bocca has been awarded in some way by Time Out Magazine. In fact they have published the list of 50 best dishes in Abu Dhabi mentioning my “burrata with grilled calamari”.
The burrata is a prominent Italian delicacy made with a mozzarella shell filled with a soft mix of cream and mozzarella scraps (called “stracciatella”).

It is born in the Bianchini farm, around the year 1920, in the city of Andria (Apulia region) and rapidly has been produced also by several other farms in the same area, because of this new way to use back the leftover of the mozzarella production

It has a rich buttery flavour and it can be served with salads, prosciutto crudo, pasta and in many other combinations, but has much it is simple, as much it is a curative remedy for the mind and the soul (…and I’m not kidding).

For the Bocca version I choose to serve this wonder with a scoop of juicy sautéed eggplants, grilled calamari on the side, some cherry tomato here and there and a touch of extra virgin olive oil.

Indeed, it rocks!!!

Abu Dhabi Time Out Awards 2013




In the night of October 8th, Bocca at Hilton Abu Dhabi has received a well deserved Time Out Award as Best Italian Restaurant in Abu Dhabi. The competition is very strong here and this is means that we have been the strongest.

On the personal side I'm very happy, not only because this repay me back after 12 months of deep dedication to this venue, but also because, once again I have the evidence that the only place where success comes before work is the dictionary.
...and now let's celebrate...

Goumet Abu Dhabi Brunch

The last act of the Gourmet Abu Dhabi event has been a brunch at Hotel Fairmont Bab al Bahr where 10 of the hosting hotels joined with their teams and their own equipments to put in place a huge banquet with live cooking stations in every corner of the ballroom.
Hilton Abu Dhabi cannot miss this kind of events, so together with Chef Yvan (Executive Chef) and Chef Praveen (Executive Pastry Chef), we put together an amazing show cooking corner serving to hundreds delighted guests Parmigiano Panna Cotta with Wild Berries, Home Cured Air Dried Duck Breast with Artichoke and Pomegranate Salad, Farro della Garfagnana Soup, Crab Tortelli with Broccoli Sauce and Anchovy Butter and, in the carving station, a gorgeous Milk Fed Veal Rack slow cooked overnight.

Gourmet Abu Dhabi


Every year in February there is an important culinary event in Abu Dhabi called "Gourmet Abu Dhabi". 
Michelin starred chefs are invited and hosted in several hotels in town, they bring their cuisine and the guests can enjoy two weeks of outstanding performances.
Hilton Abu Dhabi had the pleasure to be part of the event hosting Roberto Cerea Chef Patron of the Restaurant Da Vittorio*** in Brusaporto (Bergamo province).
...and I had the pleasure to assist him and his team (Mimmo, Mauro and Graziano) to achieve four successful nights at Bocca.

Parmigiano-Reggiano, the king of the cheeses

Cheese has a prominent place among the products of animal origin. Among our types of cheese of the oldest tradition Parmigiano Reggiano can now be considered as a symbol of culture and civilization.
Parmigiano-Reggiano cheese is one of the most imitated in the world.
In the Parmigiano-Reggiano there is a real concentration of nutritional substances, as a kilo of cheese comes out from a 16 litres of the most valuable milk of the typical zone (and every wheel is about 45 kg!!!), exceptional for its protein and vitamin content and for its wealth of calcium and phosphorus (excellent for children).
After a complex production procedure and 12 months aging, the Consorzio Parmigiano-Reggiano, founded back in 1934, inspects each and every cheese. The cheese is tested by a master grader whose only instruments are a hammer and his ear. By tapping the wheel at various points, he can identify undesirable cracks and voids within the wheel. Those cheeses that pass the test are then heat branded on the rind with the Consorzio's logo.
The whole production should come from a restricted area - according to the law that on 1955 defined the standard of this cheese: the provinces of Modena, Parma and Reggio Emilia and partially Bologna and Mantova.
It is in fact due also to the geographical position of the production zone that the Parmigiano Reggiano is a cheese absolutely unique and impossible to imitate.
Even the name itself shows the close link with the surrounding areas: the towns of Parma and Reggio Emilia.

White Truffle

The first definite information on truffles appears in the “Naturalis Historia" of Pliny the Elder. In the first century AD, thanks to the Greek philosopher Plutarch of Chaeronea was passed on the idea that the precious fungus was born by the combined action of water, heat and lightning. Various poets drew inspiration from here, one of these, Juvenal, explained that the origin of the precious fungus, at that time called "tuber terrae", is due to a thunderbolt hurled by Jupiter near an oak tree (tree considered sacred to the father of the gods). As Jupiter was also famous for his prodigious sexual activity, truffles have always been attributed aphrodisiac qualities. Physician Galen wrote: "The truffle is very nutritious and can give the pleasure."

Among the notable renaissance authors must cite at least the doctor Umbrian Alfonso Ceccarelli, who wrote a book on the truffle, the Opusculus tuberis (1564), which summarizes the opinions of naturalists Greek and Latin, and various historical anecdotes. From this reading is that the truffle has always been highly prized food, particularly in the tables of nobles and prelates. For some, its aroma was a sort of "fifth essence" that caused an effect on the human being ecstatic.
Research conducted by Raoul Molinari and Giordano Berti on chronicles of medieval and Renaissance texts, historical texts of the Savoy House and letters of reporters and travelers from the eighteenth and nineteenth century, has brought to light an extraordinary amount of news that enhance the entire Monferrato area (which includes Casal Monferrato, Alessandria, Acqui, Asti, Langhe and Roero) as a place of production of the most excellent truffles, superior in quality to those in France.

Among the places that are renowned since the Middle Ages for the research and sale of truffles emerge in particular two cities: Casale Monferrato whose truffles, before the annexation to the Kingdom of Piedmont, were appointed to the court of the Gonzaga of Mantua, Tortona, the center of supply for the Visconti-Sforza of Milan.

Truffles are quite rare, and are edible and highly appreciated in gastronomy, cost up to very high amounts (for some varieties, including more than 4,000 euros per kg). Italy is one of the largest producers and exporters of truffles. In the Italian territory you can collect all kinds of truffles used in cooking. Other major areas of production of white truffles as well as the province of Asti and Alba, is the area of ​​San Miniato in Tuscany, the one of Acqualagna in the province of Pesaro-Urbino, and the one of San Pietro Avellana in the province of Isernia and theone of Ateleta in the province of L’Aquila. Much more common is the black truffle, which sees in Umbria one of the most suited to its production.

In Italy it is always possible to collect truffles, unless the period of late April. Traditionally, the collection was accomplished using a piglet. The problem with this method is that the pig is fond of truffles, and should hold him to prevent him from eating found.
Nowadays, in Italy are used only properly trained dogs from not take particular breeds (apart from the Lagotto Romagnolo), on the contrary usually chooses a small bastards. But in some regions of France, notably in the Lot and in Perigord, is used today to go in search of truffles with pigs fully trained, a habit that in Italy, as demonstrated by a thorough search of Giordano Berti on a large amount illustrated magazines and photographic, has disappeared after World War II to meet the increasing demand for truffles and the subsequent development of "schools" for training truffle dogs.
Despite the association of the image of the boar with truffles, wild boar has never been used, because of the apparent difficulty of controlling a wild animal and not be tamed.

The truffle, prized as a niche product, fits perfectly to the marketing model made ​​in Italy. It is sold whole and fresh, despite the exorbitant cost, the difficulty of transport and storage, but it is also transformed in a creative way by many processing enterprises. They are usually prepared jars with small whole truffles, and other products based on this mushroom carpaccio (thin slices or to), including ready-made sauces usually a mushroom, which are suitable for use on crostini, bruschetta , durum wheat pasta, fresh pasta or soy fillet steaks. Other preparations are common and bitter brandy truffle.
